Omotenashi
持て成しHospitality that does not wait to be asked. Your tea arrives at the temperature that leaf wants, not the temperature that is convenient. Nobody mentions it.
Ichigo Ichie
一期一会One time, one meeting. We do not batch our cocktails. The drink in front of you was built in front of you, and it will never be built exactly that way again.
Shokunin
職人The craftsman's spirit. Ice is carved, not scooped. Citrus is cut to order. Tea is blended in-house and by season. The discipline is invisible in the glass.
